Zucchini Bread

Zucchini Bread
  • 2 C. sugar
  • 3 Eggs beaten
  • 1 C. veg. oil
  • 2 C. grated zucchini
  • 3 tsp. vanilla
  • 3 C. Flour
  • 1 tsp. salt
  • 1 tsp. Baking Soda
  • 3 tsp. cinnamon
  • 3/4 tsp. Nutmeg
  • 1/4 tsp. Baking Powder
  • 1 C. chopped Nuts (optional)
Bake 1 hour at 325*     Makes 2 regular loaves or approximately 5 small loaves.

I made Zucchini bread the other day.  The kids have had it for breakfast every morning.  They love it!
The boys said, "You can even see the zucchini in it!"  I highly suggest you try this one!
